How to fix: Cross-Contamination — Raw Animal Food Over Ready-to-Eat

Raw meats, poultry, or eggs were stored above or touching ready-to-eat foods, risking pathogen transfer.

What this violation means

FDA Food Code 3-302.11 requires that raw animal foods be stored separately from and below ready-to-eat foods to prevent cross-contamination. The standard ordering in a walk-in cooler from top to bottom is: ready-to-eat foods, whole fish, whole cuts of beef/pork, ground meats, and raw poultry at the bottom. Storing raw chicken above a bowl of cut salad greens is a direct Salmonella transfer risk.

Step-by-step: how to fix this before re-inspection

1Immediately rearrange all coolers to the correct top-to-bottom storage order before re-inspection
2Post a storage order chart inside each walk-in cooler
3Train all kitchen staff on proper storage order — conduct a walk-through of the coolers
4Implement color-coded cutting boards (red for raw meat, green for produce, etc.)
5Document the training with employee sign-off sheets

What the inspector rechecks at re-inspection

WHAT THE INSPECTOR CHECKS

Inspectors do not just look at the surface. For this violation, expect them to verify:

Walks through every cooler and freezer checking storage order
Looks for raw proteins stored on the same shelf as or above RTE foods
Checks prep areas for cross-contamination during active food preparation
Verifies cutting boards are color-coded or properly designated by food type

How to prevent this violation from recurring

Include cooler storage order in the daily opening checklist
Make cooler organization part of new-hire training
Post a visual guide inside the walk-in showing which shelf each food type belongs on
