Buildup of grease, food waste, and garbage around the dumpster area attracts rodents, flies, and other pests that can then enter the establishment. Standing grease near a back door is also a fire and slip hazard. Inspectors cite this violation when the area shows evidence of prolonged neglect: grease pooled on the pavement, trash scattered outside the containers, or strong odors.
