FDA Food Code 2-201.11 requires food establishments to have a written employee illness policy that: (1) lists the reportable symptoms and diagnoses (vomiting, diarrhea, jaundice, Salmonella, E. coli, Hepatitis A, Shigella, Norovirus), (2) requires employees to report these to the Person in Charge, and (3) establishes exclusion from food handling when an employee is symptomatic or diagnosed.
