What this violation means

FDA Food Code 2-401.11 restricts eating, drinking, and tobacco use in food handling areas to prevent contamination. Employees may drink from a covered beverage container with a straw or lid in food prep areas, but eating and tobacco use are prohibited. An open drink — even water — sitting on a prep table is a violation. The risk is saliva, hand-to-mouth contact, and tobacco residue contaminating food contact surfaces, equipment, or the food itself. This is one of the most commonly cited violations because it is easy to overlook in a busy kitchen.
