Food was stored uncovered in a walk-in cooler, dry storage, or during prep, leaving it exposed to contamination from above or adjacent sources.
FDA Food Code 3-302.12 requires that food be protected from contamination by storing it in containers with tight-fitting lids, covered with food-grade wrap, or otherwise shielded from overhead drips, dust, splatter, and pests. Open pans of cut produce left uncovered in the walk-in, bulk containers of flour with no lid, and sheet pans of raw protein uncovered on a cooler shelf are all common examples. While this is a Core violation, repeated findings indicate a systemic failure of storage discipline that raises cross-contamination risk across the kitchen.
