Pouring dirty mop water down a food prep sink contaminates the sink and the drain area with bacteria and chemical residue. Pouring it down a handwashing sink removes a critical food safety fixture from use and potentially contaminates it. Inspectors check whether a mop sink is present, accessible, and being used correctly, and whether staff are aware of the proper disposal procedure.
