FDA Food Code 4-501.114 requires that mechanical and manual warewashing achieve effective sanitization — either through heat (180°F final rinse in a high-temp machine) or chemical sanitizer at correct concentration (chlorine: 50–100 ppm; quaternary ammonium: 200–400 ppm per manufacturer). Sanitizer that is too weak does not kill pathogens on food-contact surfaces. Sanitizer that is too strong can leave chemical residues that contaminate food. Inspectors test concentration with test strips and verify water temperature with a thermometer or temperature-sensing strip.
