How to fix: Wiping Cloths Not Stored in Sanitizer Between Uses

Wiping cloths used to clean food-contact surfaces were left on counters or in water instead of being stored in a sanitizer solution between uses.

What this violation means

FDA Food Code 3-304.14 requires that wet wiping cloths used for wiping food spills from tableware and food-contact surfaces during service be kept in a chemical sanitizer solution between uses, maintained at an approved concentration. Cloths left on the counter or rinsed in plain water accumulate bacteria rapidly and can spread pathogens across every surface they touch. Each cloth used for food-contact surfaces must reside in sanitizer whenever not actively in use.

Step-by-step: how to fix this before re-inspection

1Set up a properly labeled sanitizer bucket at each prep station before re-inspection
2Mix fresh sanitizer solution and verify the concentration with test strips
3Train all staff: wet cloths go into the sanitizer bucket the moment they are not in your hand
4Use separate, clearly marked cloths and buckets for food-contact versus non-food-contact surfaces
5Change sanitizer solution every 4 hours or when it becomes visibly soiled or falls below concentration

What the inspector rechecks at re-inspection

WHAT THE INSPECTOR CHECKS

Inspectors do not just look at the surface. For this violation, expect them to verify:

Looks for wet wiping cloths left on prep surfaces, counters, or in the waistband of aprons
Checks that every wet cloth is stored in a labeled sanitizer solution bucket when not in use
Tests sanitizer bucket concentration with test strips to confirm it is in the approved range
Distinguishes between cloths used for food-contact surfaces (must be in sanitizer) and those used for floors or non-food surfaces (stored separately)

How to prevent this violation from recurring

Include sanitizer bucket setup on the opening checklist for every prep station
Post a reminder at each station: "Cloths in bucket when not in use"
Test bucket concentration at every shift change and document the result
