Ice used to cool drinks or chill food was also used to store food packages or non-food items, contaminating the ice intended for human consumption.
FDA Food Code 3-303.11 prohibits the use of ice as a food ingredient or for chilling beverages if that same ice has been used to store packaged food or to chill equipment. Ice that has been in contact with exterior packaging, seafood, or non-food items can become contaminated and must not be served as part of a drink or used as a food ingredient. Many operations keep bottled drinks in ice bins and then use scoop from the same bin for beverage ice — if the bottles are not clean and sanitized, this is a violation. This is a Priority violation because contaminated ice is consumed directly.
