How to fix: Three-Compartment Sink — Improper Setup or Use

The three-compartment sink was not set up correctly with separate wash, rinse, and sanitize compartments, or sanitizer concentration was not tested at setup.

What this violation means

FDA Food Code 4-501.112 requires that manual warewashing follow the sequence: wash in soapy water (at least 110°F), rinse in clean water, and sanitize in chemical solution of correct concentration. Many operations run all three compartments incorrectly — using the wrong sequence, skipping the rinse, not testing sanitizer concentration, or washing and sanitizing in the same water. Inspectors observe the setup, ask staff to explain the process, and test sanitizer concentration. Improper three-compartment sink use means equipment, utensils, and food contact surfaces are not effectively sanitized, leaving pathogens that can transfer to food.

Step-by-step: how to fix this before re-inspection

1Set up the three-compartment sink in the correct order: (1) wash with detergent at 110°F minimum, (2) rinse with clean water, (3) sanitize with chemical solution at correct concentration
2Test sanitizer concentration at setup with test strips — adjust until within range (chlorine 50–100 ppm, quat ammonium 200–400 ppm)
3Change all three compartments when wash water becomes visibly dirty, rinse water becomes soapy, or sanitizer concentration drops below range
4Post step-by-step setup instructions above the sink with the required concentration range
5Train all staff who wash dishes on correct procedure and require a test-strip reading before use

What the inspector rechecks at re-inspection

WHAT THE INSPECTOR CHECKS

Inspectors do not just look at the surface. For this violation, expect them to verify:

Checks that all three compartments are filled and the correct sequence is being followed
Verifies wash water temperature is at least 110°F
Tests sanitizer concentration in the third compartment with test strips
Confirms a clean rinse compartment separates wash from sanitize
Asks staff to demonstrate or explain the correct three-step process

How to prevent this violation from recurring

Log sanitizer concentration at setup and every 2 hours during service on a sink log
Keep extra test strips and sanitizer concentrate at the sink station
Include sink setup verification on the opening checklist
