FDA Food Code 4-904.11 requires that single-service and single-use articles be stored in a clean, dry location with the food-contact surfaces protected from contamination. Forks stored tines-up in a server station, cups stored rim-up near a register, or unwrapped straws loose in a countertop holder are common violations. While Core in severity, improperly stored utensils can contact contaminated surfaces, hands, or airborne particles and then transfer those contaminants to customers. Inspectors check all service stations, server areas, and customer self-service locations.

Step-by-step: how to fix this before re-inspection

1Flip all cups and glasses to store them inverted — rim down, handle up
2Store forks, knives, and spoons with the handle up so staff and customers grasp the handle, not the food-contact end
3Wrap bulk utensils or use a dispenser that allows only the handle to be touched when retrieving
4Store all single-service items in covered dispensers or original packaging until use
5Conduct a walk-through of all server stations and self-service areas and correct storage immediately
